way too many to just use as slices...what should i do with them? probably not really sauce tomatoes, maybe i can make a salsa? what would y'all do?

If you like spaghetti buy a jar of sauce and dump them in and boil them. It really adds something to the sauce. While you're at it throw in some green peppers, mushrooms and onion. Yum Yum! :ph34r:

Dice the tomatoes

Chop up some basil

Crush a few cloves of garlic

Grate some fresh parmasean cheese

Mix together with olive oil and splash of red wine vinegar

Let sit in the refridgerator for a few hours.

Serve with toasted slices of bread. I like a nice baguette.

Voila! You have a nice fresh bruschetta.

nice!!! i had helped cut up said tomatoes and lettuce for hamburgers at our concession stand at the swim meet, these were the leftovers.....

Summertime oh summertime! Use them in a gazpacho. Put them with some cucumbers, bell peppers, garlic, and herbs (parsley or basil or cilantro) into a cuisinart and run until chopped fine. Then add some olive oil, balsamic vinegar, salt and black pepper to taste.

2 slices bread (Wonder Bread if you are a traditionalist)

4-6 tomato slices

salt and pepper to taste

mayo

 

spread mayo on both slices of bread

place tomato slices on one slice of bread

salt and pepper to taste

place other slice of bread on top

 

cut on diagonal

 

enjoy
