To the 'Guineas' of the Wall

My folks are coming down to visit next friday and being that St. Joseph's day is right around the corner, I thought maybe I would prepare a semi-St. Joseph's Table for my Mom, rather than going out for the non-existent friday fish fry....anyone have any good recipes they can share? I am scouring the internet for recipes as well, but i know there are those here that take pride in their cooking and ethnic backgrounds....let me know....thanks in advance
