I want to say Adam Archuleta but I'm not sure, look what it did for his career. Stunts are just stunts. I'll be more impressed with TD's and interceptions !

Many athletes do movements like this, they are called plyometrics and are training techniques for explosion. Petersons are some of the most impressive I've heard of though, very rare and impressive.
