The place was a high rated, top of the line pizza joint.

 

Side story, when I worked in a casino, I'd get my lunch from the snack bar.  Early on I printed out their menu from the website, and each day I'd try something different, to find my favorites, likes, and avoid, items.  Eventually though, the taco salad, and turkey burger which were two of my favorites, were not big sellers and they took them off the menu.

Red pizza   -  pepperoni, mushrooms, artichokes, green bell peppers plus occasionally Italian sausage and/or red onions.

White pizza - Italian sausage, mushrooms, artichokes, roasted garlic, green bell peppers, red onions

I bet that's exactly how your toilet would describe your next day deposit of the remnants!

Sometimes it takes two days to clear that kind of cheese 🧀🧀🧀🧀🧀

We change it up a lot, but we’ve landed on pepperoni, mushrooms and banana peppers as our go to. Left to my own devices I’d swap out the banana peppers for roasted fresh jalapeños, but that’s a bit much for the wife. Straight up pep or shroom is always good too. Charcuterie meats are fantastic on pizza and some specialty pizzas are great too.

I went to a new-ish restaurant yesterday. One of the two partners is from Italy and has a fine dining Italian place in town we love. The new place is more casual (and closer to me) and I’m thinking of going back today for the prosciutto and arugula pizza. I’m just intrigued.

I love a great Neapolitan white pie, with prosciutto and arugula!

The prosciutto and arugula pizza was amazing! I’m already planning on trying to get my wife up there next weekend. It reminds me of the pizza we made in a cooking class in Rome a couple years ago. The instructor explained that this was different from the pizza in Naples where they toss dough. Ours was just rolled, and amazing! I have a pic of my wife with this big old pie in front of her, annd another pic of her taking the last bite! So light and airy it didn’t fill us up!

 

The bartender today was telling me if I like the prosciutto and arugula pizza I need to try the white pizza. It’s got ricotta, truffles and mushrooms. It’s on my list now. I’ve been there 5 times in the last 2 weeks since I learned it was open. The owner is from Italy and the menu has so many things that need to be tasted!

For the record, I think that is the best leftover pizza I have ever had. The prosciutto was the star hot. (The fat was quicker to the tongue?)  The arugula was almost a nuisance when served hot as much of it fell all over. But the arugula gives you a fresh bite and is the leading taste when it’s cooled. It’s almost like two different dishes. 

 

I’ll be back there, and try a bunch of toppings. Prosciutto is my new favorite.
