You don't need a mixer or a dough hook to make pasta. Hand kneading or mixing up in a food processor is fine for making fresh pasta. A pasta roller is essential. A $20 hand cranked variety is more than fine for fresh egg pasta. You can get by with a wine bottle and a knife and call it rustic. 1 Quote
