The BBQ Sauce I will make tomorrow morning and it will be quasi KC style.

 

Obviously, smoking typically requires a dry patted down meat however the marinate I used is wet with non-salt spices.  The reason I don't use salt even though it is crucial to draw the moisture to the surface is due to my high blood pressure.  Sodium is NOT my friend.  So I use No Salt which has potassium rather than sodium.  In this case, I have various non-salt seasoning mixes I use and the side ribs I have fresh lemon juice and a fake soya sauce with some dry spices and the breast bones have Worcester Sauce and Apple Cider Vinegar and some Cayenne Pepper and another non-salt dry seasoning mix. 

 

I have a covered stack a pear tree clippings -- some 4" in diameter -- that a friend gave me in 2022 from trimming his 2 massive pear trees.

 

It is a small vertical electric smoker so it is limited in so many ways however it gets the job done for the infrequent smoking that I do these days.

I'm making KC style spare ribs on my Traeger and using Gates BBQ sauce from KC.  Going all out, Mafia!

Bingo!  People think KC Masterpiece is the KC BBQ sauce. It isn't.  Smoke belongs on the meat, not in the sauce.  Gates or Arthur Bryants are the only sauces I'll use for ribs.  Perfect combo of sweet and spice.  

 

Now excuse me, I have to dust the snow off my Weber and drag it from the backyard.  

 

Baby backs and wings tomorrow.

I'm doing  a riff of what I made last weekend. It's a brunch vibe. 

 

I want something comforting and soothing so I'll make some cheesy potatoes with a crescent roll quiche recipe. On the table I'll put grapes with some crisps and honey goat cheese.

 

I'll wash it down with mimosas and coffee.  Standard victory shot of fireball post game 🙂

I looked into getting some shipped up to Canada a year or so ago and the cost was prohibitive so found 3-4 recipes and made my own.

 

I did that for the game this year that we slapped the Chiefs around.

 

I still have molasses left.

Same routine as last week:  wings this afternoon at a local establishment with the best wings I have found in CT, then my wife's homemade beef on weck at gametime tomorrow.

My son and I stopped at Arthur Bryants on the way to Colorado.  It was better than advertised!

Pizza - (homemade) A Pepperoni, Ital sausage, sweet pepper for me and a vegetarian pie for my wife.

 

I'll also throw some wings in the air fryer, blend BBQ sauce, water and cayenne pepper into a tasty and spicy sauce. Blue cheese, celery and carrots on the side.

 

I think Betty Crocker and I may make a chocolate cake for the Bills game, we'll have the pizza and wings during the Eagle/Peanuts game. Besides ... cakewalk *****.

A 1:00 PM game usually nothing other than snacks ... A 6:00 PM game usually just dessert ... I'll eat during the earlier game tomorrow

I never knew that. Thanks for pointing that out. No wonder I wasn't on the injury list this week with my arthritis.

I'm italian too, I made a pizza for breakfast and ate just a bit to get through the game. Wolfed the rest of it down right after the game.

Pizza can and should be served for every meal.

 

The winters can be harsh up here so we tarp up our Italian Wood Burning Oven however I can't wait until late March when I pull off all the outdoor tarps and get that baby past 700F just to allow it to cool down slightly to slide in our homemade pizzas.

 

Easter is late this year so I am thinking about some exotic pizzas for Easter rather than the usual Baby Goat or whatever.

Same - too wound up. I'll eat something hours prior because the alcohol consumption that ensues. Then, I gorge myself like any glutton might post game.
