I always tell the owner to put on extra salt as they tone it down for Tampa people don’t know it’s the signature Buffalo delicacy.

Just gave the pork ribs and beef short ribs a turnover in their marinating freezer bags at the back of the fridge.

 

Smell awesome.

 

Early tomorrow morning I will go purchase whatever I don't have in the kitchen for the Kansas City BBQ Sauce and some large Russet Potatoes for the accompanying fries.

 

Weather for Sunday Morning is forecast to be sunny and beautiful so smoking the ribs on the Big Green Egg is a go.

Dude...you are so lucky!

Mine are good, but Viola's is just unworldly! 

 

The roll is so key & since living out West for almost 20 years, I haven't found any rolls close in Cali or Idaho like they are WNY,same with DiCamillo bread.

@Sweats if your not a good cook just get the straight store bought mac n cheese and follow directions. 

 

Then you could boil a couple of hot dogs for 8-10 minutes (maybe Nathan's), cut up into pieces and mix right into the mac n cheese and boom you have a mac n cheese casserole !

 just slice and warm the au jus and horseradish on the side. Perhaps some sourdough for dipping

If you are going all out with Burnt Ends, I suggest you make their traditional fries on the side.  Fresh, hand cut Russets, skin on, cooked in lard.

 

 

 

I sourced 3 Russet Potatoes that weigh 2+ lbs each.

 

NO lard however.

 

I can't do that to myself although it was a stable in our Northern Italian family after the annual butchering of a couple of pigs in the basement for salami, sausage, etc.

 

Going to deep fry the skin on fries outside in peanut oil.

Going simple. Grilling pork chops that were cut Friday from a little place in Springville. Potatoes of course and throw together something for an app or two. Go Bills!

Lighting up the BIG GREEN EGG in the smoking position within 30 minutes.

 

Going to use hardwood lump charcoal from Quebec and then pear tree think branches.

 

Will use some left over pellets at the end for the final smoke.

Grilled chicken wings. Sous vide prior to the game with salt, pepper and garlic. Grill, sauce, grill again and final sauce. So freaking tender you can pull the bones out of the flats.
 

Beers including wild ale, sour and some regular brews.  

 

Utz dill pickle potato chips.

 

Finish off with a couple of tasty cigars watching fans be fans in Lot 7.

late start lunch will be a chopped Italian BMT on focaccia  olive oil sweet peppers onion lettuce tomato and side potato chips
