More than likely the issue is that sushi is best in the restaurant, and there probably arent many sushi places in Buffalo large enough to deal with Josh;s celebrity. Kuni came here around 1978 at the invitation of Bob Rich Jr. He gets his fish straight from Japan through Alaska every few days. Food safety laws require that any fish that is served raw must be frozen all the way through to kill bacteria. Southern Junction was a finalist for a James Beard award (first Buffalo Restaurant in 34 years to achieve that along with Bar a Vin). There are levels to this and that’s kind of the sushi point.
