You can tell because the burgers have begun to turn brown after being exposed to air. The myoglobin in the meat causes this reaction. The fake meat veggie burgers don't contain myoglobin, therefore they don't turn brown. I worked on a food pathogen detection project once upon a time as well. But anyway...what happens when you flip that "veggie" burger onto the "tofu" side? You don't need to have grilled a burger in your entire life to know that you FLIP them when cooking.
