To me, the rule should be if you get two feet down and then bobble it afterwards but gather it again before you go out of bounds, it should be a catch.

I dont understand why it wouldn't be a catch. So what if the ball moved a little, he had control of it with one hand and both feet down. One handed catches still count as catches.

Let me spell it out for you…you go for 2 because you want to take the lead and not have to take your chances in OT if you can keep the Chiefs from scoring.  If you think you have a better chance of making the two-point conversion than you do of winning the game in OT, you go for the 2 points.
