the easiest way to go is to deep fry that sucker.  i've only done it twice, and it's come out perfect.  one hour for a 20 lb turkey.  the trick is the weather.  if it's overly cold or windy, it may take longer.  this year it was raining a bit, so i put up one of those pop up tents, and it was perfect.  no mess, no issues...just a perfect turkey.

awesome man, good to know. The cooking roles in my home are clearly defined just as I like it, me the basic cook everything, daughter baker and hubby grill guy and smoker. Gotta love it 🙂

You don't give yourself enough credit, re: your "cheating" comment.  There's a hell of a lot more to it than just setting it and forgetting it, including flavor profiles, timing, pre/post smoking practices/methods, etc.

 

I've had the pleasure of tasting smoked meats that you've done in various types of smokers and everything has been nothing short of fantastic.

My wife did that for the first time and then I put it in the roaster.

I've had one spatchcocked turkey that friends made a few years ago.  It was great!!  I doubt I'll ever do it, as I enjoy the in-bird stuffing too much.

That is the downside.  Maybe the bird who's spatch has been cocked could become a summer tradition. I did miss the stuffing.

My wife wanted to do it because last year the whole turkey (in the roaster) was cooked unevenly.  I'd say it worked.  As for stuffing, you put a whole turkey in breast side up so I think that the stuffing would come out.

I actually think Stove Top stuffing is delicious.  Is it as good as the recipe I used for Thanksgiving?  Hell no.  But in a pinch, Stove Top delivers, IMO.

I feel the appliance pain.  My fridge and my dryer both crapped out in the last week.  $2k later I'm good to go. Can you smoke a Turkey in a new gas dryer?

@225 12 minutes/pound. Put a probe in the breast and pull at an internal temp of 157.
