1) my standard at home is pretty simple— bacon, egg, and cheese on an English muffin, croissant, or homemade biscuit. Egg is over medium and cheese is preferably American. 
 

2) not exactly a breakfast sammie, but I have been digging recently my poached egg on a hearty toast, slathered in guacamole or avocado, with liberal hot sauce and pepper. My 6-year old loves that one too. 

 

 

Yeah I am coming around to really liking avocado toast for breakfast. Lightly toasted whole wheat bread with guacamole on it is surprisingly very tasty.

Guac is good on anything, IMO.  But straight up avocado?  It's like eating caulk.

Usual at home: bacon, egg & cheese on an English muffin or scrambled eggs, cheese & salsa (+meat sometimes) in a tortilla.

 

If I’m feeling fancy at home: lox on a toasted whole grain bagel. Smoked salmon, cream cheese, capers and red onion.  Maybe some dill if I have it. 
 

McDonalds sausage, egg & cheese English muffin if I need to grab fast food.  It’s pretty much the only thing from there I’ll eat.  Same from Timmy Ho’s except on a whole grain bagel if I want coffee.

Caulk? You must be eating ones that are not ripe. They need to be a little soft before you cut them open.

I tried avocado a couple of times way back and didn't like it... I have a short list of foods to revisit (beets are another one) so I'll add avocado to it. For many years... probably 30, I couldn't stand cream cheese. Now I can put that ***** on almost anything... toasted seeded rye with cream cheese with some fried bacon slices and tomato slices is pretty good. Best open faced imo.

Lox, cream cheese, capers, red onion on everything bagel. Amazing. Have to dip it in Tabasco a little. When I cure my lox I insert a bunch of fresh dill in there before vacuum sealing.

Easy. Buy a long slab of salmon. Cut it in the middle (two equal 6-8 inch chunks.). 1 cup sugar. 1 cup kosher salt. Fresh ground pepper. Mix together. Lay salmon chunks on baking sheet. Spread the cure on both sides generously (skin side and meat side). Throw some fresh dill on the two meat sides. Put them together. Roll out Saran Wrap. Start at one end (the two skin sides will face out). Wrap in triangle (like folding a flag). Then Wrap again tightly straight down keep folding it over. Put in a gallon Ziploc. Put in refrigerator. Flip every day for 3-5 days. When done you’ll notice it tightened up. Unseal the wrap and rinse in cool water until most of salt is out. Then, vacuum seal with fresh dill on top of meat side. Let refrigerate for a day or two. I usually use one fresh and freeze the other half for the next week or two. One of my favorite bfast Sammie’s.
