Common denominator for the successes is the owner working the bar and being sociable with the clientele. I've seen enough episodes of Bar Rescue to know this is true. You don't sit at the bar drinking each night, you're on the floor, running food, stocking the ice/beer, checking on the kitchen, checking in with customers, etc....
