This is gonna be a tough one, so to clarify what I'm looking for:

Any Mexican (not other Latin) dish (including hand-held foods not necessarily requiring a plate) can be included in your response.

For me, it's gotta be Tamales. Preferably pork, but beef or chicken will  do. But Tamales it is.

It's an old recipe, one of the classics you'll find in the historical texts.  Very meaty, a little game, but still delicious. Quite filling and is best served with many drinks.  The recipe book calls it "Gugny". While it sounds like an Italian dish and looks Asian in presentation, it is definitely a Mexican dish. And boy, is it a dish.

Enchiladas...preferably beef. Enchilada sauce might be one of the best sauces out there and my wife makes some kick ass enchiladas.
