i used to go to a sports bar that had buffalo-style TURKEY wings.

 

I'll tell you what, it's pretty good.

We usually attend Maryland Renaissance Festival and each time one of us will buy a turkey leg.  Those events must result in a lot of lame turkeys.

I  liquid brined for a couple years, but it's too much work and takes up too much space.

For the last few, including this year, I've dry brined.

Takes more time, but much easier, and great results.

The best part of Turkey day is left over open faced turkey sandwhiches the next day.

 

Toast bread. Little may on the bread.  Cover with turkey and load with gravy. Cant wait!
