They most likely prefer their meat raw and seasoned. It's okay to grind it up an put in a freezer first, but they say it is fresher if you don't.

Braising the shank tomorrow. Record heat here tomorrow so not exactly braised meat weather but I don't want to refreeze it.

Salty? Does it fill you up? Did your wife enjoy? Could she handle all of it?
