I'm just spit balling here but wouldn't it possibly be more effective to remove the entire head and spinal cord as an attached unit and reinstall it into a different similar height body?

Yes it should be called a body transplant - if you get a new heart you do not call it "everything buy the heart transplant".

You transplant something smaller onto/into something larger.

No. The spinal cord sends off nerves that would need to be cut and that would make it technically far more difficult, if not impossible.

As a general rule, but in this instance the guy with the head is getting a new body. The guy with the body will have no clue he has a new head.

Correct. This really cuts to heart of ontological dualism and blends the empirical with pseudo science like medicine.
