BringBackFergy Posted April 6, 2015 Posted April 6, 2015 This is interesting. The recipe I use calls for the exact opposite-- warming the pans in the oven and then into a hot oven. The biology and mechanics of popovers are fascinating. Dare I say that this could be the topic of a thesis of an aspiring and forward-thinking biological engineering student. LOL. Funny how the use of the oven in opposite ways yields something so light, airy and delicious.
