another white knuckle day driving, snow will be light in nature thus blowy , whiteout snow. The last was heavy snow hard to shovel but not so much blowing. Whatever this winter no break, either extremly cold or snowy, or both, hardly any rest.

Yeah... I am getting ready to leave, just got in... The wind is picking up and drifting kinda fast on the flat open areas (which is everywhere!)...

Yet, it is making us hardier! Getting to the point where I am just in a shirt and beanie (toque for all you guys up there! ;) )... Hey it is Toque Tuesday!

Be safe!

Called in to work due to a whiteout. Shoveled my driveway for about an hour only to have the a**hole next door plow all of his snow into the road and leave it there. Minutes later, the city plow came by and gave me my neighbors snow to shovel. Just finished that and am inside getting warm.

Made three different cured sausages. Saffron, honey and red chili, porcini and herbs de provence and smoked paprika, red wine and garlic. They're now hanging in my curing box with the lonza (cured pork loin) bresaola (cured beef) and Camembert cheese.

Did you get those instructions/directions online? If so, please post a link or PM me. I need something to do on Sundays while drinking beer.

Also, send me beer.

Here's a great site for recipes.

Oh and I'll be curing a pork belly later today. And all the beer I have is fake beer.

Any instructions for the smoker, though? I look at Craigslist and other sites for free stuff when not looking for escorts. I've seen several free non-working freezers and thought about trying to make one.

I don't use it for a smoker. I converted upright freezer to a curing box. Here's a good site and pretty much what I did.
