They are absolutely right that knife skills are the first thing a new cook needs to learn. This just isn't the way to do it. Not sure I get it. This was a terrible article that didn't explain at all how it works.

Yeah - at first I thought it meant you had to cut the pages a certain way to open them, but I'm not sure...

Oh and BTW I'm really good with a knife but boy oh boy did it take practice. I have the war wounds to prove it.

 

I am at best a rank amateur , but love to cook. My knife skills suck. I have asked for a Knife Skills class at Williams Sonoma for Fathers Day...rotten kids better come through
