boyst Posted April 13, 2013 Posted April 13, 2013 (edited) Since I am a highly non-respected unprofessional farmer I figured ya'll might like to know about this... I often get my bacon from my packager directly since I do not have any hogs. However, I have not been over that way in a while and just been buying it from the store. I have bought many different brands, from Neeses and other regional offerings to standard Walmart bacon, and more. The only thing that compares to what I get at my packager (more current name for the butcher who now harvests the livestock - PC Uhmerika...fawk yeah!)...Anyway, Oscar Myer Butcher Thick Cut Bacon is probably the best thing I have found out there that compares to real, fresh and direct from a real butcher out there. I know many here like their bacon, so go get some of this and have it... edit: And for the love of Allah. When you make any bacon, remove it from your fridge and bring it to room temperature at the very least first. I run mine under warm to hot water before opening it. This softens the fat and helps it cook much better. Edited April 13, 2013 by jboyst62
Beerball Posted April 13, 2013 Posted April 13, 2013 I may get banned for this, but, I don't get the love affair with bacon. I like bacon with my eggs as much as the next guy, but I don't need it on/in much else. Bacon on a burger tastes like bacon, not burger.
boyst Posted April 13, 2013 Author Posted April 13, 2013 I want to make a bacon weave... http://www.youtube.com/watch?v=T-cZAyyvFCY Come on, man... been there, done that. I use bacon when I make twice baked potatoes and I do like bacon with liver & onions. A BLT sammich is tough to beat. Must have a bit on Clams Casino. That's about all I can think of at the moment. Bacon suffers from over hyping.
BuffaloBill Posted April 13, 2013 Posted April 13, 2013 Bacon suffers from over hyping. A chat with the lady Beerball is in order ... Clearly you have gone off your meds and lost what little was left of your mind.

Simon Posted April 14, 2013 Posted April 14, 2013 You forgot bacon yogurt, bacon-wrapped lobster tails and a bacon martini. And you forgot bacon vodka in your bloody mary. That's good stuff. Oh, and this too........

I'm all-in with crispy bacon, though. There is a local burger chain where I live that makes a BBQ bacon cheddar burger that is pretty fantastic. It's one of those foods where each component just has perfect synergy with the others, but the bacon is the most important part, IMO. That crispy, smoky salty meat combined with the sweet KC style BBQ sauce....holy crap is it good.

I remember when I first started deer hunting in 73 or 4, down my buddy's dad's [Vern was his name] deer camp. First deer down the old guy's would yell "liver in onions tonight Vern!" Yuck. Us kids would drive into town for burgers while the old timer's were in Vern's cabin cooking their beloved "liver in onions".
KD in CA Posted April 14, 2013 Posted April 14, 2013 Do y'all slather up yer wimmin with bacon too? Give the wife a bacon grease massage and she'll be putty in your hands. Happy Sunday Morning -- time for some bacon! The Applegate Farms Natural is on the skillet.

The Applegate Farms Natural is on the skillet. Had a friend come over yesterday for breakfast. Gf, friend and I. She brought us the wrong bacon. Not the thick stuff! Either way, I won't complain. I just sat back and let them cook it all... like a boss. Either way, more Bacon today.
BuffaloBillsForever Posted April 14, 2013 Posted April 14, 2013 (edited) IMO one of the worst things to eat is over crispy, brittle bacon. I'm definitely in the non-crispy bacon camp. Edited April 14, 2013 by BuffaloBillsForever

Chef Jim Posted April 14, 2013 Posted April 14, 2013 I'm with the sphere o' beer here. Bacon? Eh. I have some pork belly in the fridge I cured now that's some good eats. Had to wait a month for it but it was well worth the wait. Oh and liver and onions?? Yeah baby!!

Chef Jim Posted April 14, 2013 Posted April 14, 2013 Cured pork belly is bacon. Correct but let me ask you, have you ever opened a package of bacon and eaten it uncooked? Trust me, it's not the same.

I have, when I was a child. A few times. I only heat up bacon in a pan until it is warm and starts to render a bit of fat on both sides. Technically the USDA defines bacon as cured pork belly, but they also recommend you don't eat it right out of the package. Edited April 14, 2013 by BuffaloBillsForever
