We took a cruise to Alaska during the Stanly Cup finals this past year, and the hockey games didn't appear to be playing anywhere... Check out http://www.cruisecritic.com and post on the forums for your specific cruise; lots of people have taken multipel cruises and I bet someone can help you out. Well, not quite your traditional sports bar, but it had about 8 TVs with the Sunday Ticket. What game is on which TV usually depends on the crowd there.
