It sounded cool in the email but I wasn't sure. Saw that video and thought hell yeah!! From the email: Peay will be served at two stations. The first is a little risque, admittedly. It is named the Whole Beef Grinding Demo where chefs will make sustainable sliders and tartar from a 21 day-aged grass fed cow. I will served one of our Syrahs with it. And, I have convinced Soyoung Scanlon from the incomparable Andante Dairy to provide one of her cheeses for the sliders. Yes, that is neat. Please. From the number of wine glasses I saw, I doubt if these people could tell the difference between a grass fed Shepard and a septic tank eating coyote.

Trust me, people that go to these things (especially in Napa) know their ****. And it's funny, the more wine we drink the more me know. We end up knowing everything about things we know nothing about.
