Calories Per Serving: NA Preparation Time: 1.5 hours Difficulty: Easy Ingredients: 3 lg sweet potatoes, boiled, peeled, sliced 2 sticks butter 1 cup sugar 4 eggs, beaten 2/3 cup buttermilk 2 tsp vanilla 1 tsp lemon juice 1/8 tsp cinnamon 1/8 tsp nutmeg 1/8 tsp ground cloves 1/8 tsp ginger 2 tsp spiced rum 2 9 inch single pie crusts. Cooking Instructions: * Preheat oven to 300. * In a large bowl, mash potatoes while still hot. * Add butter and mix well. * Stir in sugar and eggs. * Add buttermilk, vanilla and spices. Combine well. * Pour into crusts, bake for about 1 hour. Note, protect the edge of the crust with foil for first 30 minutes or so. You want to slow bake, because too fast and the filling will crack.
