What should I make for dinner??

Ok so having some peeps over tonight and I'm thinking I'm making these short ribs............

And then I need something green....I was going to do this creamed spinach......

but I think that might be a really heavy meal. Sound pretty damn good but I might be taking a nap 15 minutes after I eat all that. Aside from Rettata, does anybody got any good recipes for entertaining about 10 people. I'm open to all suggestions.

Anyway sometimes simple is best - saute some garlic in a small amount of garlic then throw your spinach in (pan should be hot but to the low side) wilt the spinach and serve.

I can only tell you what I like to do with larger groups at my house. I spend most of my efforts on appetizers. Have things all done on trays (cheese, sausages, crackers) some other things that are served hot that just need to be reheated (rumaki, meatballs) and dips and spreads (I like to make a chicken liver mousse) that you can just put out. That way you can spend time with your guests instead of working in the kitchen. For main course I like to so something family style that doesn't need to be pre-plated. I did a baked penne pasta with Italian sausage and homemade mozzarella cheese. It was only for the two of us but I made enough for probably ten people. :(

 

But regarding the creamed spinach just a word of warning. You'll need a shitload of spinach for that many people seeing it wilts down to nothing when you cook it. For greens I like mustard greens or broccoli rapini with lots of garlic.

Stl, I am sorry, but I can't look at your avatar and imagine you doing a fancy meal like that. For you I would say CHicken Nuggets, with Pace Picante "mild", and ketchup for those that can't handle the spice. Also apple sauce would really complement the meal.

 

And don't forget the Martinelli's sparkling cider to cleanse the pallet.

 

And creamed corn for the vegetable.

Let me know how the blue cheese mashed potatoes turn out. Two of my favorite things combined into one, sounds yummy.

Unheated Chef Boyardee ravioli out of a can. Just give everybody a can (and a can opener if you want to really impress) and then you can really go to town. For dessert, give them directions to the nearest Dairy Queen. A nice touch is sending them along with a coupon if one is available.

Mostly great ideas Sage. As far as the ravioli, you can find them with pull top cans in some stores.

 

I'm not big on the DQ idea as you may want the people to hang around a bit. I'd go with those miniature boxes of cereal. Give the people you really like the Lucky Charms, and the jerks get Cheerios.

Speaking of, i opened my pantry to find 2 mini boxes of cereal, one Trix and one Cheerios, and i totally went with the Trix!!

Here's a tip, to help you decide which is your bread plate and which is your drinking glass in the so-called "everyday" dinner service:

 

Put out your arms, wrist up, and mate your index fingers to the thumb. The left hand forms a sort of a "b". The right, sort of a "d".

 

There you go - "b" is your bread plate, and "d" is your drinking glass. Your fork and napkin is on the left. Your knife and soup spoon is is on the right. That fork/spoon above your plate is for your dessert.

 

 

Always remember - serve from the left, and remove from the right. Never seat spouses next to each other in a formal dinner in an "ala Russe" supper. Placecards are there for a reason.

 

"Turning the table" remains a nice thing to do by a host/hostess who keeps a keen eye. I despair of people who mutter to their accompaniment..."you aren't paying attention to ME."

 

The idea of a gathering is to meet and converse with others...

I often draw a blank on which side of the plate the fork goes on, so I imagine myself (a right-hander) cutting a piece of steak. Fork in my left hand pinning down the steak and knife in my right hand sawing away.
