Cranberry Relish:
1/4 tsp fresh ground nutmeg
3/8 cup orange juice
3/8 cup pineapple juice
1/2 cup sugar
1/4 tsp fresh grated cinnamon
1/8 tsp fresh ground cloves
12 oz fresh cranberries
1/4 cup golden raisins
1/2 cup chopped pecans
1/8 tsp ground ginger
In a saucepan, combine juice, sugar, cinnamon, nutmeg and cloves. Cook over a medium heat, stirring, until sugar dissolves. Add cranberries and raisins, bring to a boil. Reduce heat, simmer 3-4 minutes or until cranberries pop. Remove from heat, stir in nuts and ginger. Chill overnight.
