  3. Absolutely. I learned to smoke in a Weber Jumbo Joe. I still have it, but don't use it very often anymore since I brought home the old brick oven from the restaurant. I have cords upon cords of wood, so it's hard to justify 8 bucks a bag for charcoal when I can just split wood and burn it. Honestly, if you wanted to step up, you could just get a smoker with the side-saddle firebox. You can pick them up for a couple hundred. Works very similar to as well as my Lang. I just need to big one obviously for volume's sake. Or just keep doing what you are doing, since you are having good results. If it ain't broke, don't fix it so they say. Cheers to outdoor cooking with fire! Nothing better than cooking with wood!
  4. I light mine with lump charcoal. But I cook with wood from trees I dropped myself, and I certainly dont break them down to chips or little chunks. That said, I don't smoke in a weber, I use a commercial side firebox smoker (I own a restauant) and have absolutely no problem keeping a steady 225 degrees for 20+ hours with a mix of Shag Hickory and Cherry or Apple. My smoker has 4 dampers on the firebox, and has the "reverse flow" baffle which makes it super easy to maintain temps.
  5. That will work... Here is the best advice- try to maintain white smoke. When your fire gets too hot it will smell like wood gas and smoke will be gray, and that will lead to that terrible bitter smokiness. Make use of your dampers to regulate the heat well. Damper by the fire will allow air feed, but the smokestack damper (or damper on the opposite side of the fire) will regulate how much smoke is in your chamber, which leads to more/less oxygen in the mix and will burn hotter or colder. Ideally you have a serious coal bed (oak is one of the best at making good coals), and when you shut the door, the flame goes out and it billows huge clouds of thick, bright white smoke. Don't put your roast on until your fire is built up and already producing white smoke. Don't rely too much on the timing (8-9 hours). Cook until it's done. Luckily for you, braising in the smoker (what you are doing), is one of the more fool-proof ways of producing quality from your smoker. Good luck!

  7. Man I LOVE Hank, Hank Jr., and Hank III; but I don't like this at all. Not because she's a she, I really like Dolly, Patsy, and Jeannine C Riley, but this sounds like alot of other stuff to me. Reminds me a bit of Sheryl Crow. What I really love about the Williams Dynasty is that they redefine the genre, and I feel like this falls short of that admittedly lofty expectation.   8. Heck of alot cheaper than the Sunday Ticket... Buf if I read it right you have to be "in market". If you have to be in the Bills market, that also means you could just pick up an antenna and get them for free (minus tye cost of the antenna of course), and that if you subscribe to any type of cable you already get these games. So in my opinion this is not a competitor of Directv
  9. I was thinking 18 was pretty accurate.... on a ranking of all sports that is probably where I think we would land. In the NFL, my instinct and bias tells me 1st, but honestly anywhere between 5 and 12 probably has a legitimate argument. I'm not sure how an objective analysis comes up with this 18 ranking though. Good thing it is of no consequence.
  10. I'll be there! In tow will be my buddy who's a LAC fan and his 10 year old Bills fan son. He's a little scared lol. He's never been to a game and has heard we are not welcoming of opposing fans. At least that means we have been doing our job. I told him I usually get more **** for bringing an opposing fan (have been to GB and CIN with buddies who we fans of them). Either way will be smoking, grilling, or both. Probably a brisket and various accoutrement.
  11. I get your argument about being in "poor taste", but that is certainly not why I dislike the term. I just think the term bills mafia (or sabres mafia) is cheesy and, to use the technical terminology, dorky. But you can't kick a nickname, so we will forever be called the Bills Mafia until it get swallowed by political correctness.

  15. If this video is a smoking gun, you are just seeing what you want to see. Confirmation bias is real. No to mention that you're memory (not you specifically, you collectively) is some twisted amalgamation of what happened, what you wanted to happen, and you're dreams. Add in to that constant reshaping of you're mental fortitude and an ever-changing petspective, and one thing becomes massively apparent- you cannot trust you're memory, no matter how incorruptible you percieve it to be. Also... My guess is the most likely... They were shooting a commercial and there happened to be an upside down light.   17. Clearly this is just and attempt to depose the President. Same as stormy, they don't care about how he affects their particular case, it's just a hope to put him under oath, a chance to get the exposure, or a bit of both.
  18. Idk. My shoulders are feeling great after shedding that drought monkey. A 3-5 win season doesn't upset me this year. Wheels are in motion. I'm not mad at low guessers, we have 3 unproven QBs. Honestly though, I would guess it's more like 7 wins, but would not complain about a high pick next year if it happens.
  19. There are question marks on the line. But objectively, the secondary is top 12 at a minimum. I would say this year is set up to be a learning year for the young man at mike, but we won't be upset about the pick. My guess is they will look incredible at times, and dominate a few games.... But get exposed and look like rookies out there just as often. I just need to see consistency in the secondary, growth and flashes from the lb's, and not really much as far as the dline goes. McBeane did the secondary last year, linebacker this year, and I would expect a rebuild of the line next year post-Kyle.
  20. Idk. I agree it's release was a PR fluff piece, but... I remember Brady Quinn doing commercials, and he never did a damn thing. Would not surprise me if Mahomes got offers, he was a top 10 pick that was traded up for by a playoff team led by Andy Ried.
  21. I find that Diamond Crystal makes a much better, more consistent kosher salt than Morton. Morton changed their process and now the kosher is ground almost as fine as table salt.... But I guess if you use table salt, it's hard to beat.
  22. I could not agree more. Though I think Marrone was a better coach, I had the most fun watching those Gailey teams. Your remark on how they embodied the "underdog spirit" is exactly it. Made them fun to root for (and Chans offense fun to watch) with cast-off tiny no arm QB, 7th round reciever, and a D3 RB. Stevie, Freddy, Fitz, and Chan individually rank among my favorites of the enire drought as well.
  23. Some of thise rules are excessive... My rules: 1. You are a fan of your home team (within reasonable distance or a choice of the few closest) 2. That's it. You don't get to switch. Ever. You can watch other games, even take sides in those games, but you don't have a second favorite team, you don't buy another teams memorabilia, and you don't even wear another teams item if it was free. 3. If given an article (hat, tshirt, jersey) from a Boston based team, piss on it.
  24. Probably what it is. This guy shot a large dog, wolf, or a hybrid of the two. The pic doesn't look out of the ordinary to me. Article says the floppy ears, shaggy coat, and short legs make it unusual, but I know at least 2 dogs that fit each of those attributes. Around me there are feral dogs mated with coyotes, been around my whole life. We call them coy-dogs.
