  12. I worked there (on Atlantic Ave) for awhile back in the early 2000's. Part of my job was riding around in the pickup van. Went everywhere, saw many many things. Gave me a lot of good stories for parties.

  14. The order of the plays is what it's all about though. Especially when judging an OC. It's what you call and when you call it. It's how you setup things for the future then capitalize on it. It's how you a reading what the defense is trying to do to you and then effectively countering that. Of course the offense is the same offense. It's GOING to be the same offense. It's about how it's called in-game and how it's executed. Dorsey's problem was never the playbook.
  15. Johnson replaces Harris. Fournette is there to put heat on Murray When you know the other team really can't throw and isn't going to spread the field and the only way they can really hurt you is running the ball then you can play more real 4-3 defense.
  16. It was nice to see a cohesive offensive attack for a change rather than throwing darts hoping something will work. Also, re: Davis and Shakir. They play different positions and Davis would have had a TD today if the line held up for another second. He was going to be open and Allen was about to throw him the ball. It's not about who plays and who doesn't. They can all play and have a role. in a 1 TE offense. What I saw today that was encouraging is that they didn't seem to be forcing the ball to any one particular player. They had a coordinated attack of running the ball and then taking advantage of the aggressive LBs in the middle of the field. That led to the slot guys and backs getting more throws tonight. Davis was on the field almost all night and did a good job blocking and drawing coverage downfield. If you don't cover him, Allen WILL throw it there so you have to keep someone back and respect it. That just gives the middle of the field guys even more room to work. If the OC is doing it right, everyone can be an option. The defense CAN'T guard everyone so it's taking what's there and getting the defense to try to play whack a mole. Some days will be like today where it's the middle of the field and Davis and Diggs don't see the ball as much as the TEs, backs and Shakir. This is how it SHOULD be though. Throw to the open dude. If they want to double Diggs, someone else is open. They want to shut down the deep throws? The middle of the field is open. They have enough guys that can catch the ball. They have enough players that can get open. Everything needs to be working harmoniously to make that happen and that's what Dorsey sucked at. Too many times the offense had zero rhythm and when that happened he'd default into forcing the ball to Diggs to try to get it going.
  17. Ribeye is correct, it's shaved down super thin then chopped up on the flattop. "wit" gets you fried onions. Cheese you get some debate even here. American, provolone, or some places do whiz. I don't care for the whiz. I generally prefer provolone wit. Tonight I had a good american wit. I like the provolone flavor a little better to it but the American cheese gets really integrated into the sandwich in a way that provolone doesn't. Whiz does that really well also, I just don't like Whiz. I'd actually like to be present if you walk into a place and order one with swiss. It will be comedic. You don't see green peppers on cheesesteaks here, at least not often, and you have to ask for them specifically if you want them. It's not part of a "standard" cheesesteak order. Also, no lettuce or tomato or mayo or any of that. Why would you want lettuce on a hot sandwich like that anyway? It's just going to wilt immediately. As someone else stated the rolls matter a lot and they are hard to duplicate outside Philly. Baking is chemistry and the water you use to make any dough matters a lot. The specific mineral content, pH, etc. of the water in Philly municipal water will be different than somewhere else. The more different the water is the harder it is to reproduce a specific baked product. I know of places that import Philly water just to make rolls with. Amoroso's you can get from the store and they are ok. A lot of the shops use Liscio's and they are a little different. You want something that is a little crusty but not hard so it stands up to the meat and the cheese. Too soft a roll will just disintegrate. Sort of like a good kimmelweck roll is just a little bit crusty. The grocery store Amoroso's that come in the plastic bags are softer than ideal, the shop delivered Amoroso's are better. I'm going to guess that the dough is a little different because the ones in the store are expected to last on the shelf longer than the daily delivery ones.
  18. Freeze it some before you slice it There is so much wrong with this. To each their own, but almost no part of this is a Philly cheesesteak. That said the cheesesteak is not the best sandwich here. Roast pork with sharp provolone and broccoli rabe all day. Put it on a stick, freeze it up, and just lick it like a psychopath. Love it.
  19. The silliest stats from Allen IMO are his rushing stats. He's 3rd in team history with 45 rushing TDs. He's currently 9th in team history in rushing yards and he could be 7th by the end of next weekend. This team has not generally lacked for running backs in its history.
