I had to have two rounds of Tylenol this morning and had difficulty having a glass of wine with lunch. I hope to rebound for the Bills game. May need to nap through this Steelers and Bengals game. -

Bought 3 lbs of attached fresh chicken wings and have them marinating since yesterday morning in a Cajun Asian fusion I created. Will grill them on the NG for game time. As an appetizer, I bought 4 lbs of mussels that I will cook up in a garlic wine marinara sauce with crusty Italian bread. Not to theme. I know. -

Food is life my Bills Brethren. It is a form of Art. Great ideas here. I will see what looks good early tomorrow morning when I go shopping. After the smoked brisket and ribs of the KC game and that 3 lb Tomahawk Steak for the Cowboys game, some fish might be wise. i need a cleanse before the Wife’s Big Ass Christmas Dinner. -
When the Chargers were in San Diego, my go to was Fish Tacos. Now they are in LA which is too big to have only one or two signature dishes. Even the name Chargers does not lend itself to an obvious theme. Open to suggestions.

Naked. I don’t think the jumbo roaster chicken wings up here in Canada are anywhere near as enormous as the ones you have south of the border due to different poultry regulation regimes. The ones I had last time at Gabriel’s Gate were ridiculously gigantic. I am a flat guy and always order flats only — “we will try…” — unless the wife is with me since she likes the drums. When I make wings at home, I look for fresh wings not even cut up and simply cook them that way whether on the grill, smoker, air fryer, oven or slow stewed stove top Caribbean stylee.

The OL’s performance in the Cowboys game was well beyond impressive. If the OL continues to play at that level, not only will the Bills make the playoffs, they will make a deep playoff run.

Definitely Baked Beans. I make awesome baked beans. I will get a new 30L keg of IPA on Friday for the ManCave Kegerator from here… https://cliffordbrewing.com/clifford-beers/ Beans, Onions, Fried Eggs, Broccoli and high IBU IPAs — What could go wrong? I hope the wife wants to cuddle after the game. Did that last week and I am still eating left over Beef Brisket and Pork Side Ribs from the electric smoker.

Got the Beef Brisket on the 2nd lowest rack with the completed two Racks of Pork Side Ribs on the rack above it and the Pork Breast Bone on the top rack. I have a fancy digital programmed thermometer in the brisket. 170F? I also found a 1 & 1/2 lb Cuttlefish I had in the freezer and thawed it out to put some peanut oil and hot curry powder on it. Going to put it on the lowest rack hours from now so that it does not drip all over the beef and pork. Time to start drinking

Early yesterday morning I scored the smallest brisket point I could find — 5 & 1/2 lbs — and two huge racks of side ribs both on sale. All rubbed up differently and in the fridge to be flipped every 12 hours prior to throwing them on the electric smoker tomorrow. Normally I use the Big Green Egg to smoke however we have already tarpped it up for the winter and the forecast is for a day of rain and wind tomorrow. It does have its own shelter but it could be miserable going to check on it even infrequently. The electric smoker is on the raised porch attached to the kitchen sheltered from the rain and wind. Yes, I am made of sugar.
