  1. For the past 3 years I have spent a month in Argentina in January/February with a large number of cousins I have there. My Father would always marinate the Baby Goat for Easter in Chimichurri Sauce -- a tradition I continue for Baby Goat and Lamb. Surprisingly, my Argentinian Cousin Leo does NOT use Chimichurri Sauce when he makes Asadio...just expensive salt and a little bit of pepper. The truth is that beef (and to a lessor extent the pork, goat and lamb) in Argentina is THE best in the world and Chimichurri Sauce would only hide that. Here in Canada I will continue to make homemade Chimichurri Sauce every couple of months because although our beef is superior than that from the U.S.A. in general, it is NOT of the elite level as that in Argentina. P.S.: I am going to be cooking local goat over an open pimento wood fire in the hills overlooking Negril Jamaica for two weeks in early February so NO charitable donations are needed. Jah Bless!!!
  2. I haven't been there for well over a decade but I remember my son (who is a huge eater) and I could NOT finish The Danny's Sub in one sitting. Just an anchor of a sub.
  3. Meaningless Game = Meaningless Menu . Normally, with the cold weather, I would be making CLAM CHOWDER for New England games. However, I am fighting a cold/cough/flu and between The Feast of Seven Fishes I made on Christmas Eve and the Sushi, Maki, California Hand Rolls, Vietnamese Cold Rolls and Steamed Dim Sum Dumplings I made for New Year's Eve, I have had enough fish for a while. BAKED BOSTON BEANS are always fun however with one of the flu systems I am just getting over, I can't trust the true nature of my flatulence. So I think I will need to focus on the two large leftover lamb thighs I made on New Year's Day and I am thinking sandwiches and soup. NOT thrilling by any means however neither will the game be. What's on your plate?

  5. 54F and sunny now. All the snow that was on the ground has melted away. Tomorrow over 1 & 1/2" of rain followed by a little rain on Monday and another 3/4" on New Year's Eve day before the temperature drops to make it all a skating rink for New Year's Day. Wild Thaw and Freeze.

  7. Agreed. I just have too many leftovers to be ordering in anything yet.
  8. Made a 4 deck Club House on huge slices of Calabrese Bread with PepperJack Cheese, Capon Breast, Smoked Ham, Bacon and Fried Sunny Side Up Eggs and Butter, Mayo, Honey Mustard and a Piri Cream. Didn't have any tomatoes or lettuce on hand. Only finished a third of it. Sooooooo many left overs to deal with here.

I would normally do something from the Sopranos like Baked Ziti however we have sooooooo many left overs from last night and today that given the game is likely meaningless I am going to rest my starting cookware. Going to bubble wrap the wooden spoons and leave the outdoor grill on the bench. I will just finish off what is left of The Feast of the Seven Fishes I made last night. I think the Octopus Stew will last that long and it is a huge batch. The wife roasted a 14 lb capon, stuffing and Shephed's Pie for lunch and there was a 12 lb smoked pork shoulder there for breakfast. No way that is finished by Sunday. I am thinking Club House Sandwiches and a nice bowl of the Octopus Stew. I made Fish Head Broth that I needed for some of the 7 dishes so a bowl of fish broth can quickly be turned into Pho or Tom Yum. So I best buckle down on the left overs so that there is room for the Sushi and Vietnamese Cold Rolls I will be making for New Year's Eve. . What's on your plate?
  10. De-seeded and de-membraned some fresh jalapeños yesterday and stuffed them with creme cheese. I must have done a good job since there was NO significant damage this morning.
  11. We you had a breakfast of eggs & have been drinking hoppy high IBU beers we call that LOADING THE CANNON up here in Canada.
  12. I ended grilling that beef steak on the natural gas grill and did a couple of big Russet Potatoes out there in foil. Carmellized 2 huge sweet onions slowly over 3 hours. Great meal. The dogs loved the beef rib bones.
  13. I love that movie and will be making that unbelievable dish in January. I have always wanted to but it is a heavy heavy meal and need some BIG eaters at the table.
  14. Someone should really point me to how to post photos here. I post photos of these meals on another site because it is simple. Put the Jamaican Tripe & Beans in my biggest sealed container I own to back of the fridge this morning when it cooled down from the crockpot heat. Can't really eat that 2 consecutive days if you want to stay married. Gave that beautiful Beef Rib Steak with Short Ribs I have been marinating a flip. Smells great. Not sure what I am going to do with it for game time tomorrow. The initial plan was to grill them on the Natural Gas Grill that is under the roof off the kitchen on the raised patio however this morning it is 3F and it is going to -10F overnight. Thinking of cast iron fajitas instead.
