Totally understand that. Steaks cooked sous vide and then seared on a charcoal grill is my preferred method. It really is worth it for the flavor and aroma. Highly recommend. You can do some amazing things blending smoking and sous vide too (sometimes called sous vide Q).

Tell you brother to put some pictures in the gallery on his website. It is odd that the article’s writer chose to include pictures of the outsides of the restaurants rather than of the pizzas. I wanted to see Craft’s so I went to their site, but there are no pictures there either. Or at least none accessible by my iOS phone. Seems like a pretty big oversight.

- Misuse of then/than. “Then” is sequential. I’m going to go to the store, then home. “Than” is comparative. I’d rather go to Wegman’s than Top’s. - WNY mispronunciation of words like elementary by pronouncing them with an emphasized -TARY instead of emphasizing “MEN” and ending with “tree”. My daughter picked up this habit and wife and I wince every time we hear her do it. - Misuse of “ironic” in place of “coincidental”. Ironic means “opposite of what was expected” not “happenstance”.

After having your first sous vide steak you will never want one done any other way. I’ve been doing it that way for 12+ years now. It might take a time or two to dial each cut/grade in to your exact liking, but the results are well worth it. And for what steak costs the investment of a precision cooker so the job is always done right is relatively minor. Don’t get caught up in the current cap numbers. Look at cash payouts for an accurate picture. The Eagles are one of the most aggressive teams with respect to managing the cap so their cash payouts are high compared to cap hits due to contract structuring. For example, Hurts is getting $40M in cash this season, but his cap number is only $13.6M. Brown is $21M cash vs $11.9M cap and Smith is $21.4M cash vs $8.1M cap. Tre had $82.4M in cash for those players versus $33.6M in 2024 cap charges. Cash payouts to those three players equate to 32.3% of this year’s cap number. The Eagles are just being very aggressive in kicking the cap hits down the road. That helps them outspend teams unable or unwilling to do that too. -

I get what you’re saying. It’s just wrong. Teams that are willing to spend absolutely can afford to pay a top QB and a top WR. The Eagles are paying a QB and TWO WRs top money. -

That’s changed over the last couple seasons as teams have been working to get more stout against the run. The spending on IOL and RBs shows that many teams are still committed to improving their run game however. As a counter I expect teams to run more MOFC coverages that are better against the run. That means more cover 1 and 3 on early downs rather than 2 and 4. I’m also interested in seeing how teams that go more man heavy do. -

Why the steadfast assertion that a team can’t spend on a top QB (I see you’ve moved that up to top 3) and a top WR? Teams obviously can do that and be successful, especially if they are willing to aggressively spend like the Eagles are. Those aren’t the only two high dollar premium positions in the NFL. In addition to the ability and willingness to spend cash, the key is drafting well. If a team can do that, then they can stay on top. -

Yup. Also he didn’t look at the Eagles who have the 4th highest paid QB to go along with WRs who rank 1st and 6th by AAV. They haven’t won the SB since the 2017 season, but they should have in 2022 and they will compete for it again this year. -
Guessing Hyde isn’t interested in the rigors of participating in a full offseason program. Whether he’s interested in the rigors of a full regular season plus playoffs is the real question. I doubt we will know until just before training camp starts in July. I’m 100% certain he will be a post 6/1 signing if he comes back at all.

This is true of most QBs, but not all. Correct me if I’m wrong but I think I remember hearing that Allen dislikes play action because he prefers to line up in shotgun and keep his eyes on the defense rather than line up under center and turn his back to the defense as play action requires. Dorsey and Brady instead used RPOs out of shotgun to blend the run and pass games. But it might be something Allen has to get used to doing. If the Bills are going to run more, then he is probably going to line up under center more often. If that happens we will want to take advantage of using traditional play action.

This is a very good point. Allen is currently 9th at $43M AAV. Burrow is first at $55M. -
Not a single one of the four teams that made the conference championship games last season would trade their skill position group (minus QB) for ours. The big difference that immediately jumps out to me is that every one of those teams has at least one blue chip player in the mix. Not to say that one of our players couldn’t develop into one, but we don’t have one yet. Just look at Kelce on KC to see how much that matters.

The highlights from Cleveland’s old Muni bring back memories. Dual use facility with baseball so there was always a section of the field that had the infield dirt across it. I remember an outfielder getting traded away who said “I don’t have any idea where to stand here. In Cleveland I’d just stand on the 50.”

That is fair. But the one thing to consider is the sudden, dramatic increase in pay for RBs. The 5th year option numbers are based on last season’s contracts. Retaining Harris would keep Warren in the role he has excelled at and that’s important. Still, it’s a bit rich and I don’t blame the Steelers for not picking it up, but a case can be made that it would be a reasonable value. I checked OTC’s valuation of him and they have it at $6.64M, which supports that. -

Agree he’s their 2nd best RB. The only surprising thing is that the 5th year option would have only been $6.7M. I understand why a team wouldn’t want to pay that for their second best RB, but with the big increase in RB compensation this off-season it might’ve been worth doing. Especially since he is still their starter and their 3rd RB is Cordarrelle Patterson. -

Yeah. Huge. Even if you want to bank on Coleman hitting big and Shakir continuing to improve, we will still want to upgrade (or at least find a long term successor for) Samuel. As much as I like Coleman the person I’m not a fan of Coleman the player, so I personally wouldn’t bank on him hitting. But I get your point. Every projected need for next season is subject to change. This is not different. I genuinely hope he surprises me and kills it.

The reduction of turnovers did seem to be the biggest positive outcome of the move from Dorsey and his pass heavy offense to Brady and his more run heavy offense. That reduction definitely translated to more wins in the second half of last season. I think it was more a case of bad luck early in the season though. Last season under Dorsey Allen had more interceptions than turnover worthy throws and it seemed like we lost a higher than typical amount of fumbles. Overall, passing is more efficient than running in the NFL. That was mitigated somewhat by defenses using schemes and personnel geared toward stopping the pass. But judging by recent trends it looks like defenses have moved into more balanced approach. In any event, here's hoping that the Bills are flexible and use whatever approach works best. -
Largely agree. 1. 10-7 is my expectation as well. Likely a WC, but should compete for AFCE title. 2. Miller is gone next offseason for sure. He will be cut with a post 6/1 designation. Knox has partial guarantees for his salary in 2025 so I think he stays, but that’s probably it for him. 3. Draft and/or FA has to bring help to the team DE1 is job 1. WR is a huge need as well. 4. Allen’s contract rework this offseason was to get him to next season. He’s going to get an extension and a raise next offseason.
