What you know is actually all you need to know. If you like the heavier feel, then that's the right knife for you. If you are so insanely incredible as a chef that you have no problem using a Ginsu 'made for TV' knife, then that's the right knife for you. We spend so much time trying to use what every one says is right that we forget that if it's right for us, then what everyone else thinks is pretty much useless. -

Everyone prefers the tenderloin when they don't have to pay for it. I would urge you to try this recipe and see how it flies with the family. I was intrigued by the idea of taking a cheaper cut like a chuck roast and sous vide'ing it into submission, and damn, all three of us fell in love with this recipe, where you pre-sear before vacuum sealing. Two notes: (1) I went a bit overboard with the rub for the crust; too much salt. Less is more. (2) The recipe said 18 hours, but I went for 30 hours at 130 degrees, and the meat came out unbelievably tender. Make the gravy from the drippings, put a side of mashed potatoes, and presto. I think my cut was 6 pounds, and we had amazing roast beef sandwiches for the rest of the week. -

Interesting topic, for me at least, because while my knife skills are not great, I genuinely enjoy the part of cooking that requires slicing, dicing, mincing, etc. My father-in-law brought me my first serious chef's knife about 10 years ago (Wustof), and after using "knife sets," it was like the first time I heard Lyle Lovett's "Here I Am" on high-end speakers. About a year-and-a-half agoI was introduced to these new knifes, tried one out and fell in love. It's like they cut the handle to fit my hand, yet it's light as can be. I got the 8" and 10" chef's knives, though I probably could live with just the 8". A lot of cash, but completely worth it to me. Can't imagine needing another knife ever again. -
You think if the attack was in the US that Obama would cancel his round of golf? Barry will never let anyone anywhere interfere with his round of golf. Not the beheading of James Foley. Not the Louisiana floods. Not even a simple planned wedding. He surely isn't going to stop just because a dozen Germans got in the way of a truck.

I'm genuinely not sure how anyone can look at that red and not come to the conclusion that the DNC got its ass kicked beyond belief. Of course, these are the same people who think Barry had eight years of no scandals, Benghazi was caused by a Youtube video and the reason Clinton lost is because American doesn't want a female president.

I think I can speak for a lot of people here when I say that it sucks ass that the Bills can play a good game, handily win a game they were expected to win handily, and come here to find someone posting stupid crap like this. But then if the Bills didn't have fools like you following the team, Tim Graham would probably be writing obituaries for a living. Make no mistake. Stupid stuff like this after a win keeps a lot of thoughtful people from contributing to this site. -

That percentage is a jetliner-flown-into-a-hi-rise away from climbing back up the chart. The problem isn't that people don't have faith. The problem is that they forget that faith should be continuous, not convenient. Have a terrorist take a gun to to work in San Bernardino and murder a dozen people, and every starts posting stuff like "Prayers for the victims." They turn to their faith in times of need only. The ones who don't have faith ever, simply because they don't believe in God, are generally the far left, who gladly continue reading a newspaper article about that gun incident, with a massive front page headline that looks like this: These are people who believe that even if there is a God, they can do a better job than Him. Leftists. -

Absolutely. At least in my own experience. One thing we do after Thanksgiving, beyond making stock, is prep soups for the next 6-8 months. One container gets stock, we dice up turkey and put it in a sandwich zip lock and then cut up carrots and celery and put in another sandwich zip lock. Both the unzipped zip locks go into a single Foodsaver bag and we vacuum seal those components. I've had no problem pulling that out eight months after going in, and the idea of having soup four meals like that ready to go is awesome, and fresh as the day it was made. The caveat, at least that I have found, is if the seal wasn't good going into the freezer (which happens on occasion with Foodsavers), and the ice builds up, it's like putting anything else in the freezer by itself. You have to watch things like ribs, that may have a sharp bone that will cut the bag when the air is being sucked out. -

I'm right about this. When it comes to eating in my house, two truths play a role: I do all the cooking, and I work from home. When good cuts of meat go on sale, I buy them up, bring them home, season and freeze and we're set. If you want to eliminate all the processed food out there AND eat really well, you can do it every night...even with a family...if you just plan ahead. -

I do this all the time. In fact, I swear my steaks do better going in frozen than going in cold. In for 3 hours at 130 degrees. I only ever season them with salt/pepper and a slab of butter before vacuum sealing, but it's my preferred way.
