When I worked in Polish deli... We would always cook the top round rare... Easier to slice, thin... AND more importantly... Will finish cooking in the GRAVY. A slow cooker/CrockPot (deli we had the chafing pans in the hot case) works well. Lightly soak both insides of the Roll before building the sandwich. Kinda like an Italian beef sandwich in Chicago. Build to taste: Dipped, Wet, or Dry... Oh... Whenever anybody ordered a pound of sliced top round (estimate: 1/4 pound per person) they received a free pint of GRAVY! 😉 In the biz, and original BoW... Gravy always goes farther than au jus. That's the practical element that was built into the original recipe for the sandwich. Heating the beef in the gravy finishes it off to where you like it. That's the original recipe. Oh... And don't forget the horseradish!

How quickly we Americanize. This was French fur trading country here and onion fields... 😉 Actually Chicago was founded by a person of African decent: Jean Baptiste Point du Sable... So gravy is out of the question here!

Well you figure... 1981 was just under 20 years removed since they were invented at the "Anchor Bar." Put it into perspective... That's like asking someone now what was invented in say 2003. AND without the internet and social media! Poutine is kinda like that, is big up in Canada, and for what it's worth.. Certain parts of Chicago of all places... Remember, Chicago is historically a French settled town, local places here on NorthSide since 1950s/60s... Look how that is taking off all over the US. Ask most people outside the North and they still don't know what poutine is. ...Just my $0.01... 😏

Side of gravy is $0.75... French Dip comes with au jus. /EndDebate... These are the real BoW places!

Still gravy and not straight up drippings! Wiechec's is still in biz in Kaisertown... Off of Clinton. They are another original BoW place... Was there just a few weeks ago: Look @ the upper left corner of current menu. They also serve a French dip!

Light gravy... It's not BS. Schwabl's and Bailo's (Bailey & Lovejoy) both uses/used "gravy"... http://blog.buffalostories.com/torn-down-tuesday-bailos-famed-for-beef-on-weck-and-an-urban-legend/ "The well-done beef, usually topped with gravy and horseradish at Bailo’s, poured off of the full-sized kimmelweck roll." https://www.schwabls.com/menu/ "Hand Carved Roast Beef robust 1/2lb. serving of our in-house roasted beef, hand-carved to your liking. served on your choice of kümmelweck, bread with gravy or without." Wrong! BoW is not a bougie sammich. It's a stick to your ribs, filling working man's sandwich from the origin. NOT sure how it got gentrified with a French dip. I am here to defend the honor of the sandwich against its bastardization and gentrification! 😆

Most people don't know what real BoW is. Even people who claim to know... 😆 Oh boy! Now you did it! It was terrible because you ordered a "French Dip" with a salted kaiser roll. Real original BoW calls for gravy not au jus! 😉

Okay... But Cincy is old. Settled after The Revolution by Revolutionary War Vets...I read it got its nickname in 1820s... That's before Cleveland and Columbus got big... -

Cincy is "Queen City of The West" circa around 1820. BFLo is "Queen City of the Great Lakes" circa decades later. Here's the list. Many in the US: https://en.m.wikipedia.org/wiki/Queen_City I thought Toledo, Ohio was also. Not on list... Maybe that was just Klinger from: M*A*S*H... 😉 -

How confident are you the Bills beat the Bengals?
ExiledInIllinois replied to Steptide's topic in The Stadium Wall
Depends on the wind, weather... If it's bad... They are predicting 1-3" snow... I'd choose which end zone to defend first/last... The best thing that can happen is the Bills lose the toss if weather is a factor. Let Bengals make the stadium error. BFLo is the last stadium in league where these confusing weather options come into play. ALWAYS TAKE weather/wind in 4th! WeatherForecast: Looks like wind will shift 90°... Hopefully it stays low... -
And guess where the SB is being played? In the Cardinals' stadium. If Bills face Eagles they'd have faced all 4 NFCeast teams and have played in the Stadium where the one other team had it's roots in the NFCeast...

Looks like snow. 80% chance. 1" during the day... 1-3" @ night... -
Word out of Ksnsas City? I wonder if Butker cheater last year? Hmmmmm: "Kansas City. Harrison Butker made 90.1 percent of his career field goal attempts prior to this season. He’s only connected on 75 percent this season (18 of 24), with three missed extra points part of the problem, too. The issue has become so controversial in Kansas City that former punter/holder Dustin Colquitt, who spent 15 seasons with the Chiefs (2005-2019), took to social media and local radio to criticize current punter/holder Tommy Townsend for his holding technique. ..." Betcha Tommy Townsend isn't cheating!

100% Bills have only played the Bills twice in playoffs, both in 1980s... They are 0-2, both in Cincy. They make it 1-2 on Sunday. -
Florio: Brady to the Dolphins "Definitely on the Table"
ExiledInIllinois replied to Nextmanup's topic in The Stadium Wall
I was born in 1968... But my old man always had the conspiracy theory that Shula was on the competition committee with the Refs... I always wondered why he thought that way. He must have watched that game at the Orange Bowl! It would be great to find video of it! -
Florio: Brady to the Dolphins "Definitely on the Table"
ExiledInIllinois replied to Nextmanup's topic in The Stadium Wall
They'd only played 14 games a season in 1972! Bills lost to them by 1 point in 1971-1972! LoL... If Bills win SB... They'd have played 4 more games than the "perfect Dolphins and won 1 more game. The Dolphins lost in game #2 of the next season. That perfect season will never be duplicated because teams back then had it easier.
