Well, I really hope not. He works really well under certain schemes out of the spread. But if the defense takes away the short stuff, he is just unable to be successful 15-30 yards down field. Bengals, Giants, Jets and now the Cowboys all have showed he is a one dimensional quarterback and can't adjust to the longer throws. What about Stevie Johnson now? He's a good WR and I like him but lets be obvious he isn't worth #1 receiver pay. -

One of the worst coaching decisions all year to kick a 52 yard field there with an unknown kicker when down by 14...wow! What has happened to this team, not only are the players imploding but so is our head coach.

Never heard of DeVore Fidelity speakers. I like vacuum tube amplifiers for things like headphones, but I stick to solid state amps for home theater. -

Polarizing is a good term especially in terms of the lower end klipsch models. Lots of midbass presence, forward midrange and A LOT of sparkle on the top end. Too much in fact for myself. I can see why many people would like them especially for home theater. I just prefer a more balanced speaker. -

I'm not a fan of horn loaded speakers especially for dialogue. Sure they play loud with very little amplification - one of the reasons movie theaters employ horn loaded speakers but too often suffer from severe colorations especially in regards to reproducing natural sounding voices. Often referred to as horn honk. I'm really interested in the new Ascend Acoustic Sierra towers. Those look amazing. -
The officiating in this game is just brutal! Goes to show this is a league wide problem and not just with the Bills games. The first game the Steelers were turning the ball over like mad. This is a much cleaner game on that front for them.

Carson Palmers stat line. 19/35, 332 YDS, 3 TD, 3 INT in a loss to Tim Tebow and the Denver Broncos. Typical Palmer. Inaccurate, however puts up a lot of total yardage and throws an interception or two or three. -
My synopsis of what the Jets where going to do on offense was pretty spot on. Surprised on how much they dominated in the second half though. Couldn't stop the ground and pound and play action killed us. We got our buts whopped in all phases of this game. It really couldn't have been any worse for use today. Overall an uninspiring performance from our coach staff as well and it showed on the field today.

LOL. That is exactly what I did with the prime rib we had last night before it reached the table. Didn't have cheese handy at the time but buttered the roll, cut a small piece of prime rib off and then dipped the sandwich into the au jus that I was making from the "fond" that was left on the roasting pan. I do that as well with the left over rolls and turkey from thanksgiving.

Anytime you cut steps it will be quicker. If you rely just on seasoning the dairy mixture you will not end up with a good final product unless you are careful. Usually what will happen is that you will end up lacking correct seasoning - on the bland side. What most people don't understand is that you if are going that route you really have to over season that mixture because the potatoes will need it. The layering way you can judge the correct amount of season more easily and consistently. This way is actually standard procedure for any gratin recipe.

The problem with just seasoning the dairy mixture is that you have to overseason it to the point of over salty because if you don't the final product will be bland, so its tougher to judge the correct amount when you are up to that threshold. If you just season the dairy mixture to the point where it tastes like you normally eat your food, you are going to end up with a tasteless product. Layering is more consistent and allows you to better gauge the seasoning. That's one thing about the restaurant business is consistency and your method allows for more variation which is a bad thing especially if one day one person makes it and different person another.

I'll be buying Modern Warfare 3 Tuesday. I loved playing the Spec Ops missions with my brother and now that Infinity Ward is making this Call of Duty, Spec Ops is back. I am one of the few that buys MW for the campaign as well because they have been stellar, although they are short in length. On Friday my money goes to Elder Scrolls: Skyrim. Battlefield looses out entirely. -
It can work either way if you would last in a particular kitchen in the quality vs speed debate. But like you said you need both to be at the top of the game. As for taking the time to season each layer would depend on the strictness of the kitchen you are working in. I have worked in some kitchens where they would demand such attention to detail, other kitchens where details like that wouldn't matter. The real problem I find with the "speedsters" in the kitchen is they try to do all things as fast as possible. Their mindset is getting food out as fast as possible. The problem lies in this mentality is where they try to cheat time when it is impossible to do so. My most common example for a line cook cutting corners is not letting meat rest, be it a steak, rack of lamb, pork tenderloin etc before they plate it. Minor things like that add up and bug the heck out of me.

Speed is nice but not the biggest priority in a professional kitchen. McDonalds, sure. People that like to be fast are often the ones that try to cut corners and often make mistakes. I'd take quality over speed anyday. Either way you do it, you have to season the dish quite a bit. A pinch of salt won't do it. That's really my point. What's 100% cream by the way? Don't know what you mean.

An important step to any gratin is seasoning each layer of potatoes with salt and pepper. Otherwise your gratin is going to be bland. Don't be shy with the salt and pepper as this dish needs it. Kosher salt if you have it, not regular table salt which is harsher. That is my biggest complaint when people make this dish, always not enough salt. I also like to add thinly sliced white onion to each layer. A pinch of grated nutmeg also works wonders. Using 35% whipping cream is a must, milk sucks for this.

My two favorite sides by far are creamed onions and sausage stuffing. Creamed onions are very easy to make. You need to blanch pearl onions in water until tender (keep the water the onions are blanched in for later). The next step is to make a bechamel sauce (look online for what that is). I like to use 35% whipping cream, butter, flour, a pinch of nutmeg, splash of white wine salt and pepper and then use some of the onion stock to get the correct consistency for the sauce. Mix sauce with the cooked pearl onions. Re-heat later.

This might be the wild card to this game. The Jet's have reverted back to letting Snachez make as little mistakes as possible. They tweaked their scheme at the start of this year and Shotty and Rexy quickly realized Snachez can't handle a passing style attack RE: Reverting back to last years offensive scheme. Ground and pound setting up the hard sell on the run in the passing attack. I'm not really afraid of the Jets offense but the Jets offense always finds ways to make a couple big plays a game which have a profound effect on the game. And that's all the Jets defense needs. Another thing.... You know they are going to take a few shots down field as we have been exposed in this area in all but 1 or 2 games. Plax has always been very difficult to cover in the redzone. So how do we scheme against them in the redzone. Burress has me worried a bit.

Shanahan made it clear he didn't want to coach the Buffalo Bills. Looks good on him. Mega mind has totally outclassed you Shanny since each of you took over your respective teams as head coach. He looked like ass today, but didn't have any other expectations. Still baffled about this trade especially if they expected to "win" this year. I bet all the Raiders fans gasped when he was hit low at the knees in his first series. His arm strength isn't up to par either. Campbell showed he is a difference maker with that team especially with Boller in there. Well, either way it didn't look good for the Raiders. The raiders are making a huge mistake with Campbell because with the CP trade and what they gave up, you have to make him your guy to legitimize that trade for the next few years. Good luck Raider nation.

So does Carson start this week or do you take advantage of the bye week and get em in there with 2 weeks of preparation. At least this trade has me interested in the Bengals. I would love to see this blow up in their face. As Bills fans we must.
